Yep, Seat numbers, as well as carriage number were allocated at the train terminal. So when you first check-in, that's when all is revealed! D

I rode Red Premium as well from Melbourne to Adelaide. I know you can bring and consume your own food/drinks during the journey though I did not since they served me lunch, afternoon snack, and I thnk dinner but not sure. I am uncertain about alcohol. You get a freed drink with your meal if you did not already know that. My advice to be sure is to contact the Southern Rail company directly. I emailed them via their customer email support when I was uncertain whether I needed to get my ticket beforehand. Southern Rail does not have an in Melbourne. When you buy your ticket online it will indicate your car and seat number. Just show and the conductor on the train will verify your reservation via your name if I recall correctly. It uses Track 2 in the Southern Cross station. Hope you enjoy your trip.
